Fried Chicken With Orange Sauce

This is something I learnt from Mum today which is both easy to cook, and delicious too! The recipe can also be easily adapted for Lemon Sauce Chicken by replacing orange juice with lemon juice instead…

Ingredients

  • 2 Chicken Legs (deboned and cut into bite sized pieces — I used frozen ones bought from the nearby supermarket although fresh ones might taste even better)
  • 1 tbsp light soya sauce
  • 1 tsp corn flour (marinate)
  • Dash of pepper
  • 1/5 tsp salt
  • 1 tsp sugar
  • 2 tbsp beaten raw egg
  • Plate of cornflour (for coating / battering the chicken piece prior to frying)

For the gravy:

  • 1 orange freshly squeezed
  • 1/4 tsp salt
  • 1 tbsp sugar
  • Small amount of grated orange peel
  • 1 tsp vinegar
  • 1 small chilli, chopped
  • 1 tsp cornflour mixed with 3 tbsp water

Method

  1. Marinate the chicken pieces with light soya sauce, corn flour, pepper, salt and sugar. Mix well and leave for 20 minutes.
  2. Heat a wok of oil.
  3. Add beaten raw egg to marinated chicken and mix well.
  4. Coat chicken pieces lightly in plate of cornflour.
  5. Deep fry chicken pieces till golden brown.
  6. Drain off excess oil – you might light to use a plate lined with kitchen towels to soak up excess oil from the chicken pieces.
  7. Place orange juice, salt, sugar, orange peel and vinegar into a small sauce pan and bring to boil.
  8. Add cornflour / water mixture slowly to saucepan to thicken the gravy, stirring all the while.
  9. Add chopped chilli and turn off stove.

Add gravy to fried chicken pieces right before serving and eat immediately (unless you like your chicken soggy :P)
