Stir-Fry Prawns With Cabbage
Not exactly Mum’s recipe, but something I kind of figured out, combining what she had taught me for the different separate ingredients.
Serves 2-4
Ingredients
- 10-14 small to medium prawns(or shrimps as the ang mo recipes tend to call them :P), shells and veins removed
- Cabbage (small one, about half), washed and cut
- 1/4 tsp salt
- 1/4 tsp sugar
- 1/4 cup water
- 2/3 tsp corn flour
- 1 tsp oyster sauce
- Small clove of garlic, diced
- Vegetable oil
Method
- Marinate prawns with salt, sugar and a pinch of corn flour. Leave in fridge for about 1/2 to 1 hour.
- Wash and prepare cabbage in the meantime.
- Heat vegetable oil in wok till hot.
- Pan-fry the prawns till they are slightly opaque and red. Do not overcook.
- Remove prawns and put it in a plate for now. They will be needed later.
- Add some more oil into the wok and fry diced garlic till golden brown.
- Add vegetables and fry on high heat for about 1-2 minutes.
- Add pinch of salt for taste and add 1/4 cup of water.
- Cover the wok and simmer on low to medium heat for 10-15 minutes.
- Remove wok cover and add prawns into the wok. Stir-fry on high heat.
- Before serving, dilute 2/3 tsp corn flour, 1 tsp oyster sauce with a small amount of water. Add this mixture gradually to the wok to thicken the gravy (while stirring the contents of the wok all the time).
- Serve hot with rice.
